Fresh local rhubarb, cleaned, trimmed and chopped.  All the work done for you!  Rehydrate and use just like fresh.  Or grind it into powder to infuse your favourite drinks, smoothies and baking.

APPROXIMATE CONVERSION:  1 lb fresh = 3 cups chopped fresh.  1 c fresh = 1/4 c dried
